Couscous tossed salad





My friend, Laura, shared this recipe with me last month at a church potluck. I've made it at least three times since then. It is so simple and easy to make and it's absolutely delicious!



Dressing:
1/4 cup Olive Oil
Juice of Two Lemons
Salt & Pepper
Chopped mint (8-12 leaves)



Salad:
Lettuce
Sliced Radishes
Sliced Cucumbers
Feta Cheese
Cous Cous (about 1 cup)



Mix the dressing and then toss it with the salad.

  1. Oh yum, I love simple recipes. This one looks like it only has a few ingredients- which for me is good. Whenever I try to cook a Rachel Ray recipe, I always end up having to buy a million new spices and stuff. It ends up being like $50 for one meal!
    Thanks for the well wishes about the couch! I've got my fingers crossed. Adam already gave the go-ahead so that is good. Sometimes I fill the place up with too much yard sale finds and he gets a little grumpy. Also we moved again last year and had to move this giant dresser up three flights of stairs. I was like three steps up and told him to start knocking on doors because there was no way I could get any further. It took 20 minutes, but we did get it up all the stairs. We decided at that point we were not ever going to lift a giant couch up all those stairs. But, since this couch is a sectional I think we can manage it. Small sectional too.
